Simplifying Food Waste Reduction

We understand that, as a restaurant owner, you have a lot on your plate: staffing, menu planning, ordering, kitchen efficiency, and hungry guests eager to make up for lost time during the pandemic. On top of it all, sustainability discussions and more demands are being placed on you.

Millum aims to assist you in meeting these requirements without imposing a substantial burden on your time and workload. We have developed the Food Waste Function, a feature that allows you to easily register and calculate food waste.

By integrating a food waste function into the system you already use for other tasks such as menu planning and ordering, it becomes as time-efficient as possible for you to record food waste.

Profitable Operation + Environment = True

One-third of the world's food is wasted. This means that a considerable amount of resources is used to produce and transport food that never gets consumed. Regardless of how environmentally conscious you are in your daily life, it's reassuring to know that by reducing food waste, you are not only contributing to the profitability of your restaurant but also combating a significant environmental issue. A win-win situation.

The function is part of the Menu Bank module in the procurement system. You can register food waste both online and offline, on mobile or PC, and retrieve ready-made Excel reports. You can also choose whether to record total food waste or specify areas such as Production, Buffet, Guest, Storage, and Other. This allows you to clearly identify areas with the greatest potential for improvement.

Tools That Help Restaurants Achieve Their Sustainability Goals

After its launch in the fall of 2021, the Food Waste Function underwent a testing period, and in April 2022, several major staff restaurant chains decided to use the function regularly.

More functionality, based on restaurant feedback and requests, will be introduced as we gather more experiences.

Millum envisions that our customers should always have the opportunity to make informed and sustainable choices using our tools. We believe that the launch of the Food Waste Function, along with Millum's carbon footprint calculator, puts us on the right track – together with you.
